This family-owned winery is located on Ontario’s outstanding Beamsville Bench, a thin strip of land in Niagara that is particularly renowned for its warm days, cool nights and great wineries.
Fielding makes many outstanding wines, but Chosen Few — a blend of Cabernet Franc, Cabernet Sauvignon and Syrah — is rich and intense, with notes of blackcurrant, cherry, chocolate, cinnamon, cedar. Well-balanced, with a long finish, too.
Decant and drink now with steak or prime rib, or tuck a bottle in the cellar for a few years. About $60.
